Avocado Corn Salad with Lime Vinaigrette

Now that spring is finally emerging, I’ve been in the mood for lighter meals than the heavier cold-weather pot roasts and hearty sandwiches I have been eating. But this is not your ordinary Salad Fare. Savory, full of healthy fats, and packed with nutrients, Avocado Corn Salad is dressed with a tangy lime vinaigrette that perks me right up instead of leaving me feeling sluggish after lunch.

The recipe here is perfect on it’s own, but you could also serve it on a bed of spring mix, wrapped in a pita, or even on a pizza crust! I love it for lunch, but it’s also a go-to dish whenever I have to bring something to a summer cook-out.

Plus, it’s super-simple to throw together.

 This could help you husk fresh corn very easily!

Oatmeal Pancakes with Honeyed Mangoes

I know that I have had requests for Oatmeal Pancakes.  So I wanted to pass on one version of Vegan Gluten -Free Oatmeal Pancakes served with Honeyed Mangoes.  But any fruit in a cooked sauce would be tasty on these I am sure.  These are very quick and easy to make, perfect for busy mornings.

I Love Oatmeal.  I try to find ways to use Oatmeal besides just having a bowel of oatmeal for my morning breakfast.  If you have any other ways to serve oatmeal for breakfast, I’d love for you to share your recipes.   Just post it in the comments below.   I use to have a fabulous recipe for oatmeal cake that could be altered as a breakfast coffee cake.  I will have to look for that and share it with you later this spring.  But for now enjoy these Oatmeal Pancakes!

 

Oatmeal Pancakes

Tempting Tuesday’s Recipe: Oatmeal Pancakes with Honeyed Mangoes

Recipe Type: Breakfast

Cuisine: Oatmeal Pancakes

Cook time: 10 mins

Total time: 25 mins

Serves: 2

Ingredients

• [b]Ingredients for Oatmeal Pancakes:[/b]
• 1/2 cup quick oats, gluten-free OR coarsely ground GF Oats
• 1/2 cup unsweetened applesauce
• 1 tsp vanilla
• 1 tsp cinnamon
• [b]
• Ingredients for Honeyed Mangoes:[/b]
• 1 or 2 Mangoes
• 5 tsp honey
• 1 tsp nutmeg

Instructions

1. [b]Instructions for the Oatmeal Pancakes:[/b]
2. Stir all ingredients together.
3. Coat a small skillet with cooking spray and warm up.
4. Spread Oat Mixture into pan, flattening like a pancake.
5. Cook on low/medium heat until bottom is brown.
6. Carefully flip over and brown other side.
7. Slide Oatmeal Pancake onto plate and serve with Honeyed Mangoes.
8. [b]For Easy Honeyed Mangoes:[/b]
9. Peel and slice Ripe Mangoes in strips
10. Place Mangoes in a medium, microwave safe bowl.
11. Add 5 Tsp Honey and 1 Tsp Nutmeg to the Mangoes
12. Stir to Coat
13. Microwave for 3 1/2 – 5 minutes, until mangoes are tender.
14. Stir Mangoes to make sure they are evenly coated and serve over pancakes
